Ingredients

  • 3 cups raw green cabbage, thinly sliced
  • 1 cup carrots, shredded
  • 1/2 avocado
  • 2 tbsp plant-based yogurt
  • juice of 1/2 lemon
  • 1 tsp salt

If you're in a hurry for a lunch or dinner, this salad can save you. it takes no more than 10 minutes to make it and it's abundant in fiber, therefore will keep you satiated for longer. This salad contains phytonutrients, healthy fats and essential vitamins like K, A and C. Enjoy!

Cooking Steps

    Take a large salad bowl and add thinly sliced cabbage, shredded carrots and gently mix with hands.

    In a blending cup add avocado, plant-based yogurt, lemon juice and salt, 2 tbsp water and blend until smooth and creamy. You can also add a handful of parsley for more phytonutrients. I do that very often.

    Pour the dressing on top of the cabbage-carrot salad and carefully combine using a spoon or your hands again. Add more salt or/and lemon juice if needed.
